Lemon No-Bake Cheesecake

How about a lemon no-bake cheesecake to curb that sweet tooth? 😍 These small cheesecakes make as amazing snacks or desserts! They are the perfect combination of tangy and sweet!😋 These cheesecakes are quite simple to make and they don’t even have to be baked! If all this sounds good to you I really recommend giving these cheesecakes a try!💕 To make this recipe even better I strongly recommend adding a few pieces of lemon meringue Goupie to these cakes! Goupie is a brand that makes A-M-A-Z-I-N-G vegan chocolates!🍫 The lemon meringue flavour is actually one of my favourites🤩




Makes nine small cakes



  • 85g digestive biscuits
  • 45g butter
  • 20g brown sugar


  • 250g plain cream cheese
  • 210g condensed coconut milk
  • Juice from 1 lemon
  • 4 lemon meringue Goupies*


  • Crush the biscuits thoroughly into fine crumbs.
  • Pour crumbs into a bowl and stir in the sugar.
  • Melt the butter and add it to the bowl.
  • Mix well until combined.
  • Add the crumb mixture to nine muffin moulds and press flat.
  • Chill in the fridge while making the filling.
  • Beat the cream cheese in a large bowl with an electric mixer until smooth.
  • Beat in the condensed milk and lemon juice.
  • Add around two heaping tablespoons of the mixture into each mould.
  • Add three pieces of chopped meringue Goupie to each mould.
  • Optional: Grate some organic lemon peel and add on top as well.
  • Freeze for a few hours before serving.


Laver ni små kager



  • 85g digestivekiks
  • 45g smør
  • 20g brun farin


  • 250g neutral smøreost
  • 210g kondenseret kokosmælk
  • Saften fra 1 citron
  • 4 lemon meringue Goupies**


  • Knus kiksene til fine krummer.
  • Hæld krummerne i en skål og tilføj sukkeret.
  • Smelt smøren og hæld det i skålen.
  • Rør godt rundt.
  • Kom kiksemassen i ni muffinforme og press massen flad.
  • Lad formene stå i køleskabet imens fyldet laves.
  • Kom smøreosten i en skål og rør med en elektrisk håndmikser.
  • Tilføj det kondenserede kokosmælk og citronsaften og miks godt.
  • Tilføj ca. to spsk. af fyldet til hver muffinform.
  • Kom tre stykker hakket meringue Goupie i hver form.
  • Valgfrit: Riv noget økologisk citronskal og drys det på toppen af hver cheese cake.
  • Frys et par timer før kagerne nydes.
