Bbq Lentils

Want a quick and easy dinner that tastes good? Here you go! These bbq lentils only take around 30 minutes to prepare. Perfect for busy days where you dont want to be in the kitchen for hours.

This dish is slighty smoky, slightly spicy and 100% delicious. Full of good protein and fiber from the lentils!

I served my bbq lentils in tacos, but you could also serve them in wraps, burger buns or in lettuce cups (I have also tried that and it was so good. Crunchy and fresh, yet satisfying)

BBQ lentil lettuce

Serves 2

  • 100g red lentils
  • 200g Water
  • 1/2 bell pepper (100g)
  • 1/2 onion (50g)
  • 5 mushrooms (100g)
  • 1 small grated carrot (30g)
  • 100g sweet corn
  • 50g sun dried tomatoes (chopped)
  • 3 tbs tomatopurée
  • 1 small jalapeno (chopped finely)
  • 2 tbs coconutsugar
  • 1 tbs smoked paprika
  • 1 tbs paprika
  • 2 tbs cumin
  • 1 tsp chilipowder
  • Salt & pepper to taste
  • Tacos/Wraps/Burgers/Lettuce

  • Add lentils and water to a saucepan and let it simmer until tender
  • Chop bell pepper, onions and mushrooms finely. Add them to a different saucepan and sauté for 10 minutes
  • Grate the carrot and add it to the saucepan together with the sweetcorn, sundried tomatoes, tomatopurée and jalapeno
  • Add the cooked lentils to the saucepan with the vegetables and stir well
  • Now add the spices and give it a good stir
  • Serve in tacos/wraps/burger buns or lettuce
  • I topped with extra sweetcorn, olives and springonion

  • 421 calories per serving (without tacos, wraps, etc)
